At char.d restaurant, chefs Dean Baker and Slava Nazaryan are at the helm. The restaurant's name refers to the cooking technique known as charring: slow grilling over charcoal or wood and cooking at high temperatures to develop rich barbecue flavors. At char.d, these modern barbecue techniques, combined with high-quality ingredients, form the common thread. The two chefs complement each other perfectly: Dean specializes in meat, while Slava focuses on fish. Alpha Deli is run by Marius, a Greek entrepreneur who brings a little piece of Athens to Amsterdam with his business. Most of the ingredients come from Greece, so the flavors remain close to home. Eatery De Reiger

Eetcafé De Reiger in the Jordaan neighborhood is still that neighborhood café where you can easily pop in for a good meal and a nice glass of wine, but behind the scenes, something has changed. Since 2025, De Reiger has been run by the same entrepreneurs you may know from Entrepot, Metro, and De Druif: young hospitality entrepreneurs with a keen eye for atmosphere, simplicity, and quality. They haven't changed much about the café; the wooden floor still creaks like it used to, and the Amstel signs are deliberately hung upside down, but in the kitchen, just that little bit of extra attention has been added. The chef-owner learned the trade from her grandmother in Ho Chi Minh City and dreamed of owning her own restaurant her entire life. Together with her daughter, who often acts as an interpreter, she built a place that is now beloved within the Vietnamese community. After decades in Toscanini's kitchen, where he is still co-owner and chef, Leonardo Pacenti also opened his own ravioli bar. In De Pijp, he created a place that exudes Italian sprezzatura. The ravioli are made entirely in-house at Pastahuis Pacenti in IJmuiden, together with partner Mark Wenneker, from durum wheat dough and fillings that change every two months. Zicami Market

Zicami Market is a bi-monthly Italian market, set up by Camilla, known for her patisserie brand La Torta di Camilla. Out of her love for her roots, she brings together a carefully selected group of Italian food makers in Amsterdam. Visitors stroll past stalls selling cannoli, handmade pasta, artisanal sauces, charcuterie, cheeses, olive oil, and dolci, as if walking through a Sicilian village. The strength of Zicami lies not only in the food, but also in the atmosphere: espresso at small tables, Italian music, and the feeling of a neighborhood market where everyone meets. Peppi Deli

Peppi Deli is not a fast food takeaway, but a personal caterer where owners Roel de Niet and Onno Diepenbach themselves work in the kitchen and in the shop. De Niet changed his classic chef training after traveling through Africa and the Middle East, and you can taste those influences in the vegetarian, largely organic menu. The menu changes with the seasons and includes dishes such as celeriac steak with gnocchi, vegetarian moussaka, and focaccia with caramelized onion and smoked labneh. The bread is baked in-house, visible from the shop, which adds to the artisanal character of the place. Peppi Deli is intended as a regular stop for the neighborhood: a quick, good, healthy meal every day, made with care and without haste.

Peps is a Spanish wine and food bar in Oud-West with a kitchen led by chef Raymond van Welzenis, who previously worked at BAUT and gives tapas and pinchos a creative twist with finesse and flavor. Tamari Ya

Tamari Ya was founded by Imoto Yoshihisa and Yazawa Yuji, two Japanese entrepreneurs who started a farm-stay retreat in their village near Hiroshima and opened their first donut shop there in 2023 to revitalize their community. Out of their love for rice, they developed the komeko donut, made from rice flour from their own region and therefore naturally gluten-free. In Amsterdam, the donuts are handmade daily and fried in rice oil, without preservatives or colorants. The texture is different from what you are used to: less fluffy, more chewy, with varieties such as old fashioned or yeast-raised in flavors such as matcha, black sesame, and pistachio. The quiet, wood-dominated shop on Overtoom feels like a piece of the Japanese countryside in the city, where attention to food and the environment is central.

Vitalente Café

Café Vita Lente was opened by Simon Witmaar, former owner of the Michelin-starred restaurant Coulisse, which he ran together with Tim van der Molen. With Vita Lente, he deliberately chose something completely different: not fine dining, but a café where spontaneity and freedom are central. Bas Holthuizen, who came over from Coulisse, is in charge of the kitchen, where he cooks in a more relaxed format with hot and cold dishes that you can order throughout the day. Gorgo Lunchroom

Gorgo was founded by Rifat Ergor and Berkutay Gunel, who left Istanbul together nine years ago and realized their dream of owning their own business in Amsterdam. Ergor is an architect, Gunel a creative director, and that creative vision is evident in everything: from the lighting in the space to the approach to the cuisine. Their lunchroom is inspired by Anatolia and they describe it as 'neither East nor West', a place where Turkish, Arabic, Persian, Armenian, and Greek influences come together. The menu features unique dishes such as toasted sandwiches with kavurma, tahini, and honey, sesame cookies filled with different sesame varieties, and drinks such as sumac lemonade and hoşaf kombucha.

Bon Burger

Bon Burger is the new venture from Freek Kattenberg, known for Bottleshop in East Amsterdam, who brings together his love of burgers and natural wine with this concept. After years of successful burger pop-ups at Bottleshop, he decided it was time for a permanent location in West Amsterdam, on the popular deck on Jacob van Lennepkade. Kattenberg believes that doing something as simple as a hamburger well is a craft, and this is reflected in his focus on grilling technique and quality. The meat comes from Dutch dual-purpose cows, which first lived as dairy cows and are therefore more sustainable and flavorful. Bon Burger feels like a relaxed neighborhood spot where connoisseurs and curious passers-by come together for burgers, wine, and long evenings by the water.

Camarat

Camarat is a new restaurant-bar concept in Amsterdam-Noord that came about after friends Beau van Haren and Ruben Andriesse took over the catering location of the former Chateau Amsterdam to realize their own vision. Wout Langendijk is in charge of the kitchen. He learned his trade at In den Doofpot, did an internship at Noma in Copenhagen, and then worked at Cantine de Caron for several years. This background forms the basis for what he himself calls "Noord Cuisine," with French technique, Scandinavian influences, and a touch of Amsterdam stubbornness. Barossa
